The somewhat unusual restaurant concept, which offers a bowl of pizza dough to enjoy pasta, opened in La Louvière on May 24, 2021. A year later, the two creators Alèn Sayadian and Thomas Albanese, 25 and 26, plan to settle in Charleroi.
“We found a place on the road to Philippeville, in Marcinelle. Charleroi already represented almost 60% of our clientele… from La Louvière”explains Alèn. “We had always promised that if we opened elsewhere, it would be in Charleroi as a priority. Promise kept during the summer, we are preparing everything on site.”
The pitch: “Did you dream of not having to choose between pasta and pizza? Pastella did it.” This restaurant offers to customize its dishes. There will be three sizes of pizza dough bowl available. Inside, seven varieties of pasta to choose from, topped with a sauce among the twenty available. And there will also be extras: truffle oil, mushrooms, ham, bacon bits, melting burrata, wood-fired mozzarella-parmesan, etc.
“For around fifteen euros, not including drinks, we ate well”explains Alèn. “The Charleroi restaurant will be mainly dedicated to take-away and delivery, around 80%. We saw that this was what worked best in La Louvière, but we will go through our phone number to start, because via takeaway or ubereats, we risk having more orders than we can handle.Today in the Center region, we sometimes have to order 4 to 5 hours in advance, we want to do better. “
But within the restaurant on the N5/Route de Philippeville, there will also be high tables for a quick bite, tables for 4 for a quiet evening with wine, or large round tables for 10 to 12 guests for parties or meetings.
