The postponed event
Initially scheduled for January 31, 2022, the tournament will finally take place on March 21 on the GD Distribution stand at the SMAHRT show at the MEETT.
The French love to eat them! On average, 800 million pizzas are consumed each year in France.
But the French also know how to make them. And to know who is the best in this field, Toulouse will welcome the third edition of the French Neapolitan pizza championship.
More than 30 competitors
The event will take place on Monday, January 31, 2022 at MEETTthe exhibition center of the Toulouse conurbation, during the SMAHRT lounge which will welcome more than 300 exhibitors for three days.
For the occasion, more than 30 Neapolitan pizza makers and specialists will make the trip to try to succeed Yoann Mormillethe defending champion.
What is a good Neapolitan pizza?
“The contestants will use a Marana wood-fired oven. On the garnish side, they will offer one of the two Marina recipes (tomato, garlic, oregano) or Margherita (tomato, bufala mozzarella and basil), considered to be the recipes that perfectly meet the specifications”, indicates the association of French pizzerias which outlines his expectations:
“Recognizable thanks to the soft and elastic texture of its dough, the Neapolitan pizza requires meticulous working of the dough. The specific display will allow it to be given its homogeneous and official shape (between 29 and 35 cm) and above all, its famous honeycombed and puffy crust called “cornicione” (1 to 2 cm), aspect that characterizes it so much. In terms of cooking, the Neapolitan pizza must be cooked between 60 and 90 seconds in an oven loaded with oak wood at a temperature 500° (i.e. 100° more than a classic pizza)”.
A jury of experts
To check the quality and compliance with the specifications, the competitors will be decided by a jury made up of professionals who have been awarded several times.
An assembly of experts which will itself be supervised by theAssociation Verace Pizza Napoletana (AVPN), which ensures the strict application of the Neapolitan pizza protocol STG (Traditional Specialty Garantita).
We are not kidding with this culinary monument, listed as an intangible heritage by UNESCO!
